Vegan Spinach Artichoke

I love Spinach Artichoke Dip but that does not work in a house of Gluten Free and no Dairy.


So......this is what I came up with - used to make stuffed mushrooms and a dip



Combine:
1 jar of artichokes - rinsed and chopped small
1 large handful of Spinach leaves - also chopped small
3 heaping TBLS of non-dairy cream cheese
1/2 cup cherry tomatoes chopped
3 TBLS chopped red onion (optional - I added to the dip only)
1 TBLS italian seasoning
salt to taste

fill your mushroom caps with the filling
Top with some vegan mozzarella cheese (I love the almond shredded cheese from Trader Joes)
drizzle with olive oil

Bake at 350 until bubbly and turning slightly brown.
